這次是美味的開心果蛋糕,非常的RICH......很營養!!
大家嚐了都讚不絕口,卡洛琳也分享了她的食譜(如下),改天來試試學作一下,只是一定要找人來幫忙吃ㄚ,我的身材已經不能負荷這rich的蛋糕了!!
不過,大家可以試做看看喔!!


開心果蛋糕(PISTACHIO CAKE)

Ingredients(蛋糕材料)
270g Unsalted butter
1 Lemon (unwaxed)
1 Vanilla Pod
100g Ground Almonds
120g Pistachios
250g Caster Sugar
4 Eggs
40g Plain Flour

Topping (淋在上頭的果醬料)
60g Pistachios
50g Caster Sugar
3 tablespoons Water
2 tablespoons sieved apricot jam

Method (做法)

Preheat oven to 150C/Gas mark 2
Line a loaf tin of 30 x 9cm and 8cm deep lined with parchment/grease-proof paper and grease the time with 20g of butter

Soften the remaining butter. Finely grate the lemon peel. Split the vanilla pod in half and scrape out the seeds. Grind the pistachios in a food processor until finely ground.

Beat the butter and sugar together until light and fluffy. Beat in the eggs one by one. Add the zest, vanilla and fold in the ground almonds and ground pistachios. Then sieve and add in the flour.

Spoon the mixture in the tin and bake for 45mins to 1 hour. Test if it is done by using a skewer to poke it and see if it comes out clean, if it does it is ready!! Leave to cool in the tin then take it out.

For the topping boil together sugar and water till syrupy then add the pistachios. You have to be very quick now-pour it onto the top of the cake it will go hard so be careful. When it is cool brush the apricot jam onto the top to make it pretty and shiny- good luck girls-I hope it is successful for u!!!!
